I don't think creationists would have much problems with explaining
the polar bear as a case of microevolution. They would say that
created bears were genetically very diversive generalists. Later polar
bears specialized, well within limits of genetic variation.
To present polar bears as a proof evolution, you would have to show
that the new features really evolved through mutations. I think that
would be rather difficult to show.
Perhaps some other species, which has well-documented mutations or a
good paleontological record, would be a better example?
